I am not quite Andrew Zimmer from Bizarre Foods but tripas are good when they are cooked right. At the paleteria, they serve one of the best aquas frescas (fruit water) I have ever had, it is a mix of mango, apple, pina, and something else, I cant remember but it is very tasty.
